How Do Restaurants Make Omelettes So Fluffy [Pro Guide]

What is the best way to start your day? With eggs for breakfast! There is no better answer than this. We can have them in so many different ways that it feels like a different meal every day. And there are not many ways we can screw up an egg.

However, we are often left with very flat eggs on our plates. So, how do restaurants make omelettes so fluffy? Well, they have few tricks up their sleeves, and today we are going to unravel all of them so we can get restaurant quality soft and fluffy eggs at home.

Ingredients You Need

At first, we are going to go over every item you need in order to make the most perfect and delicious omelets at home.

  • 3 Egg yolks
  • 2 tablespoon butter
  • Salt, to taste
  • Omelette pan
  • Pepper, to taste
  • Milk, as needed
  • Herb, to taste
  • Cheese (optional)
  • Mushrooms (optional)

How to Make the Eggs Fluffy

Before you start, you have to make sure you have all the necessary ingredients at home; you don’t want to stop midway because you are missing one or two of the essential items. So, set them aside and then start working on making the eggs.

Step 1: Crack the Eggs

Take a bowl and start by cracking all the eggs in it. Cracking eggs is pretty easy, but for this, you need to make sure the yolk is intact and do not mix with the egg whites. It is not going to work as well if that does happen.

So rather than cracking the egg against an edge, it is better to crack it on a flat surface. There is less chance of the shell piercing the yolk.

Step 2: Separate the Whites and Eggs

Once all the eggs are cracked into the bowl, you have to take the yolks out. There are three ways for you to do this. You could start with cracking the egg and use the shells to go back and forth till all the whites are in the bowl and you are left with just the yolk inside the shell. But this is a risk the shell will pop the yolk.

The second way is cracking the whole egg in the bowl and then using your hands to scoop the egg yolk out. This is a little messy, but you get a perfect yolk this way.

Now the last method of separating the yolk from the white is using an empty bottle. Squeeze the air out of the bottle and place the top above the yolk. Ease your hands, so it no longer squeezes the bottle. The yolk will instantly be sucked into the bottle. This is completely mess-free and very efficient.

Step 3: Whip the Egg White

This is the most important step in the process. If you have an electric mixer, then you will have a very easy time whipping the whites. Otherwise, you need to put a little elbow grease into the task.

Just keep whisking until you see the whites have become foamy and have started to create soft peaks. You don’t need hard peaks for this. That is better for soufflé eggs.

Step 4: Mix in Milk, Salt, and Pepper with the Yolk

You don’t need all 5 yolks for this. Just use 2 for this specific recipe. Add a dash of milk in with the yolks. This is also when you have to add the salt and pepper in. Mix until everything is combined.

Step 5: Fold the Yolk Mixture in

This is a very important step in the process as you have to be especially careful with it as you want the air to remain in the egg white. Or else your omelet is not going to be as fluffy.

So take a few spoon fulls of the whipped whites and thoroughly combine it with the yolk. This will make the whole thing much easier to mix later. 

Now, take the rest of the whipped egg whites and then add them to the yolk mixture. Be very gentle and fold the white in. This way, you don’t take the air out of the whites.

Step 6: Cook the Eggs

Take a non-stick omelet pan and put the burner on medium heat. Melt the butter properly before adding in the eggs. Pour the egg mixture and let it cook for a little while; cover the pan with a lid to make sure the top gets cooked in the steam created inside. 

You can add some chives and cilantro over the omelet. Your egg should be done in 5-8 minutes!
